शरबत…

भारतीय घरों में प्राय: किसी भी मौसम में, मेहमान के आने पड़, या किसी पार्टी में आमतौर पर शरबत बनाया जाता है. क्या आप जानते हैं कि शरबत तुर्की, अरब व फारस (ईरान) से होता हुआ भारत आया है … और वर्तमान समय में हर भारतीय गृहणियों की पहली पसंद है “शरबत” शरबत एक ऐसा पेय है जो फलों के रसों, पानी, नींबू, मसालों व अन्य समाग्रियों को मिलाकर बनाया जाता है. शरबत प्राय: शरीर को ठंडा करने के लिए पीया जाता है. भारत व पकिस्तान में शरबत में मुख्यत: पानी, चीनी, नमक, नींबू के अलावे कुछ मसाले की प्रधानता होती है, लेकिन तुर्की, अरब व फारस (ईरान) के शरबत में कई प्रकार के फलों के रसों तथा सुगंधित पुष्पों और वनस्पतियों से मिलाकर बनाये जाते हैं. बताते चलें कि शरबत अरबी भाषा के शब्द ‘शरिबा’ से बना है, जिसका अर्थ होता है ‘पीना’. अरबी भाषा में किसी भी पेय को शरबा ही कहा जाता हैं, लेकिन तुर्की और इरान में इसे ‘शेर्ब्त’ कहते हैं.

वैसे तो शरबत कई प्रकार के होते हैं.आज आपको एक विशेष तरह की शरबत बनाने की विधी बता रहें हैं जिसे आप अपने घर में आसानी से बना सकते हैं. तीखे तपिश वाली इस गर्मी के मौसम में ख़ास तरह की शरबत को पीने के बाद आप तरोताजा हो जाते हैं. इस शरबत का नाम है गुलाबी शरबत. आइये जानते हैं कि गुलाबी शरबत कैसे बनाया जाता है ….

सामग्री:-

  1. लाल गुलाब के फूल-लगभग 30 गुलाब,
  2. चुकन्दर- 1,
  3. तुलसी के पत्ते-20-25 पत्तियां,
  4. पुदीने के पत्ते-20-25 पत्तियां,
  5. धनिया के पत्ते-1 बडी चम्मच कटा हुआ,
  6. छोटी इलायची-5-6,
  7. चीनी-1 किग्रा,
  8. नींबू-

विधि:-

  1. गुलाब की पंखुडियों को 2 बार अच्छी तरह से धो कर साफ कर लें, धुली पंखुडियों को चलनी में रख कर अतिरिक्त पानी निकाल दें, अब गुलाब की पंखुडियों को सुती साफ कपडे पर फैलाइये, दूसरे कपडे से पोछ कर पानी हटा लें.
  2. एक कप पानी उबालिये, हल्का गरम रहने पर, गुलाब पंखुडियों को मिक्सर में डालिये, उबला पानी डाल कर, गुलाब पंखुडियों को पीस लें.
  3. पिसे हुए गुलाब की पंखुडियों को चलनी में डालें, किसी प्याले में गुलाब के रस को छान कर अलग कर लें.
  4. चुकन्दर को धोकर छीलिये, टुकडो में काटें, तुलसी, धनिया, और पुदीना के पत्ते धोइये और इन सबको मिला कर बारीक पिस लें, पिसा हुआ मिश्रण और 1 कप पानी, किसी बर्तन में डालें.
  5. अब गैस पर उबलने के लिये रखें, उबाल आने के बाद धीमी आंच पर 3 से 4 मिनट तक उलबने दें.
  6. इस मिश्रण को ठंडा होने दें, मिश्रण के ठंडा होने के बाद, चलनी से छाने और इस रस को प्याले में रख लें.
  7. 600 ग्राम चीनी को किसी बर्तन में डालें, 1 कप पानी मिलाएं, अब उबलने के लिये गैस पर रखें.
  8. चीनी घुलने के बाद 1-2 मिनट उबालें, और गैस बंद कर दें, इस चशनी को ठंडा होने दीजिये.
  9. बची हुई चीनी में इलायची छील कर दाने मिलाएं, और पिस लें, नींबू का रस भी 1 प्याले में निकाल लें. चीनी की चाशनी में गुलाब की पखुडियों का रस मिलाए.
  10. सभी चीजो को अच्छे से मिलाएं, शरबत को 4-5 घंटे ढक कर रखें, ताकि सारे मिक्ष्रन अच्छी तरह से मिल जाये व स्वाद और खुशबु से मन प्रसन्न हो जाये.
  11. गुलाब का गाढा शरबत बन कर तैयार है. गुलाब के शरबत को कांच की बोतल में डालकर फ्रिज में रख सकतें हैं, और जब भी आप की इच्छा हो तो 1 गिलास ठंडे पानी में 2 बडी चम्मच गुलाब शरबत डालकर मिलाएं, इस तरह आपका गुलाब शरबत तैयार है, अधिक ठंडा करने के लिये थोडी सी बर्फ डालकर परोस सकते हैं.

Do you know that Sharbat has come to India through Turkey, Arabia, and Persia (Iran) … and at present it is the first choice of every Indian housewife “Sharbat” Sharbat is a drink made of fruit juices, water, lemon, is made by mixing spices and other ingredients. Sharbat is often drunk to cool the body. In India and Pakistan, water, sugar, salt, lemon, and some spices are predominant in sorbet, but in Turkey, Arabia, and Persia (Iran) sorbet is made by mixing many types of fruit juices and aromatic flowers and plants. Let’s go. Let us tell that Sharbat is derived from the Arabic word ‘Shariba’, which means ‘to drink’. Any drink in the Arabic language is called Sharba, but in Turkey and Iran it is called ‘Shabbat’.

Although there are many types of sherbet. Today we are telling you the method of making a special type of sherbet, which you can easily make at home. You get refreshed after drinking a special kind of sherbet in this hot summer season. The name of this syrup is pink syrup. Let us know how to make pink syrup.

Material:-

  1. Red roses – about 30 roses,
  2. Beet – 1,
  3. Basil leaves-20-25 leaves,
  4. Mint leaves-20-25 leaves,
  5. Coriander leaves – 1 tbsp chopped,
  6. Small cardamom – 5-6,
  7. Sugar – 1 kg,
  8. Lemon – 2.

Method:-

  1. Wash and clean the rose petals 2 times thoroughly, remove excess water by keeping the washed petals in a sieve, now spread the rose petals on a clean cotton cloth, and remove the water by wiping with another cloth.
  2. Boil a cup of water, when it is slightly hot, put rose petals in the mixer, add boiled water, and grind the rose petals.
  3. Put the crushed rose petals in a sieve, filter the rose juice in a bowl, and separate it.
  4. Wash and peel the beetroot, cut it into pieces, wash basil, coriander, and mint leaves, and grind them together finely, put the ground mixture and 1 cup of water in a vessel.
  5. Now keep it on the gas for boiling, after boiling let it boil for 3 to 4 minutes on low flame.
  6. Let this mixture cool down, after the mixture cools down, strain it with a sieve and keep this juice in a bowl.
  7. Put 600 grams of sugar in a vessel, add 1 cup of water, and now put it on the gas to boil.
  8. After the sugar dissolves, boil for 1-2 minutes, and turn off the gas, let this syrup cool down.
  9. Add peeled cardamom seeds to the remaining sugar, and grind them, also take out lemon juice in a bowl. Add the juice of rose petals to the sugar syrup.
  10. Mix all the things well, and keep the sherbet covered for 4-5 hours so that all the mixture gets mixed well and the mind becomes happy with the taste and aroma.
  11. Thick rose syrup is ready. You can put rose syrup in a glass bottle and keep it in the refrigerator, and whenever you want, add 2 tablespoons of rose syrup to a glass of cold water and mix it, in this way, your rose syrup is ready, a little more to cool it down. Can be served with ice.
